Mt. Takao is probably the most popular. Plus there are light snacks offered along the way, at the summit and a shrine as well. It's pretty easy to get to and not too far out of Tokyo.

If you mean a REALLY light hike, taking trails around Okutama were good. It's not too precarious and not too much up down, but it does take you along the river and up into the trees above. Hiking about two stations worth made me work up a sweat.
