FOOD & BEVERAGE DIRECTOR

Overview

As Food & Beverage Director for our independent Boutique Resort, located the island of Ambergris Caye, Belize, you will strategically lead the team to take guest satisfaction to the next level of the property’s food and beverage/culinary operation, including Restaurants/Bars, Room Service and Events.

Reporting to: General Manager

Duties & Responsibilities
• Leading by example, you will lead, mentor, and train the Food & Beverage Operations team to ensure both food and service standards create unforgettable experiences for our guests.
• Set goals and expectations and hold food and beverage and culinary team accountable for demonstrating desired service behaviors.
• Develop new menus and service offerings in conjunction with the Head Chef through strategizing on new products and service offerings for the Marketing team to promote effectively.
• Ensures that regular, on-going communication occurs in all areas of food and beverage (e.g., pre-meal briefings, staff meetings, culinary team).
• Ensuring the Chef and culinary team perform consistently in regard to food quality, presentation, cost control and hygiene standards.
• Establish challenging, realistic and obtainable goals to guide operation and performance.
• Stay aware of market trends and introduces new food and beverage products to meet or exceed customer expectations, generate increased revenue, and ensure a competitive position in the market.
• Review financials to determine how Food and Beverage is performing against budget, monitoring the department’s actual and projected sales to ensure revenue goals are met or exceeded and opportunities are identified and addressed. Develop and manage the annual Food and Beverage budget.
• Opportunity to be part of the design team for renovations and further expansion in accordance with the Resort’s future plans, including recommendations for CAPEX funding of food and beverage equipment and renovations .
• Work with the Resort Owner/General Manager to determine areas of concern and develops strategies to improve the department’s financial performance.
