Stewarding Manager

About the position

The stewarding manager provides required support to successfully maintain sanitation and cleanliness standards in all kitchen and food service facilities, including loading bays and kitchen equipment.

Job Responsibilities:
• Make sure kitchen Team Members have and use the proper equipment necessary for the job (gloves, goggles, chemicals)
• Assist in training Stewarding Team Members in all aspects of safety.
• Train kitchen Team Members on proper chemical usage and safety applications
• Circulate through all kitchen areas coach for Team Member’s job performance and/or correct problems situations.
• Responsible for supervising all Stewarding staff and the overall daily management of a designated shift.
• Perform all duties with the goal of providing excellent guest service in an efficient manner.
• Schedule, train, and oversee night kitchen cleaning crews in conjunction with the steward trainer.
• Ensures all health regulations are maintained
• Contact with the customer, striving to meet their requests and exceed their expectations
• Provide lists and account for all pick-ups the day of the delivery.
• Check supply levels in storage closets. complete the requisition for additional supplies needed and submit it to the manager.
• Inspect cleanliness and organization of storage areas. Assign designated personnel to rectify any deficiencies.
• Monitor all work areas for compliance with State Health regulations and Resort requirements.
• Monitor and maintain pest control requirements in accordance with Resort standards.
• Coordinate and assist with Banquet function requirements as assigned.
• Accommodate requests for additional wares expediently and courteously. follow up on delivery of all such items.
• Responsible for delivering clean cookware and serving supplies to events, banquets and meeting rooms.
• Always maintaining a fully sanitized and clean work station
• Responsible for organizing and storing all dishes, cookware and utensils in their proper storage and locations.
• Assigns and monitors break schedules and attendance
• Maintains sanitation and cleanliness of all kitchens, bars and service areas through checklists and documentation
• Ensures all storage areas are clean, and organized and items are in proper containers
• Par levels for all equipment are maintained and stored correctly to support culinary and service staff
• Completes daily checklists, work orders, and assignments with follow up
• Manages cleanliness of the loading dock
• Performs opening and closing of stewarding responsibilities in all departments

Essential Requirements
• Minimum 2 years of experience (Same Position)
• Extensive knowledge of health and kitchen guidelines, regulations, and laws.
• Demonstrated experience scheduling and assessing staffing needs in a fast-paced, frequently changing environment.

• Excellent communication and organizational skills with Strong interpersonal and problem-solving abilities. Highly responsible & reliable and also ability to work cohesively with fellow colleagues.

• Aswan: Reliably commute or planning to relocate before starting work (Required)

Experience:
• Luxury Resorts: 7 years (Required)
