• Prepare work schedule, rosters for staff
• Plan and organize work load
• Develop new recipes for baked goods
• Supervise all area under his/her responsibility and minimizing wastage
• Establish presentation technique and quality standards with the Pastry chef
• Mix and bake ingredients according to recipes to produce required quantities of breads, pastries
• Ensure that different variety of breads is baked according to recipe
• Checks production schedule based on hotel occupancy to determine variety and quantity of goods to bake
• Responsible for right ingredients selection and that quality is maintained throughout production
• Ensures uniform portions and shapes for loaves and pastries
• Attend promptly to guest requests and complaints and partner with management on solutions to issues
• Ensure statutory Health & Safety standards in the Bakery area
• Ensure that all food preparation equipment is being used safely and correctly and that it is cleaned, maintain correctly and stored appropriately
• Documentation of the HACCP lists for all store rooms and observing the HACCP procedures for all the relevant areas
• Implement quality control procedures
• Ensure that all associates comply with the grooming & uniform standard of the hotel
• Responsible for departmental training, on the job and mentoring
• Perform any cognate duty as assigned by Pastry chef
