You can in some places, but Japanese people still carry cash. There are more e-payment options, like Line Pay, Google Pay which can be used at convenience stores and there is a push to go cashless by some companies. But a lot of shops still prefer cash.

I haven't had too much trouble using my card on my business trips, but maybe it's because I stay in Tokyo. But definitely carry some cash with you because some places don't accept cards.
